Packing attractive lunchboxes for the kids: healthy/nutritious recipes and tips


It’s time to start thinking about packing your kid’s lunch box innovatively! Packing a healthy and attractive lunch box for your kid is not an easy task. It can be a real challenge for you. You may fill their boxes with lots of wonderful things but they may not like it. So you have to think of packing those food items that not only taste good but also is sufficiently healthy for your child.

It is important to create lunches that are tasty as well as healthy. So you must figure out what your child enjoys eating. Let them suggest the vegetables and fruits they want to have for their lunch. Variety is the spice of life! So pack them varieties of food in small amount. Presentation is very important to encourage a child to eat his/her packed lunch. So you have to pack your child’s lunch in an innovative way so that they look attractive. Try something new like cut the sandwiches in interesting shapes or use different types of bread. You can also make attractive-looking kebabs with chickens. Peel the fruits and cut them into slices. As, children like to eat them in that way.

Is your child bored with white bread and whole grained bread? Try experimenting with something else like brown pita, chapattis, bagels or rice cakes. Replace high fat foods like crispies and peanuts with low-fat pretzels, mixed fruits and plain popcorn. Always try to include salad, cucumber or tomato in the sandwiches. If your kid loves cheese, look for low fat cheese like cottage cheese. You can also pack fresh fruit salad and mixed dried fruit in the lunch box. You must not allow your kids to have fizzy/carbonated drinks, as they are high on sugar and calories. Encourage them to have fresh fruit drinks instead.

Here are some healthy lunch box recipes that you can try out and encourage your kids’ eating habits away from home!

Yogurt fruit Dip

Ingredients:

o 1 cup vanilla yogurt
o ¼ cup of peach or apricot preserves
o 1/8 teaspoon of ground cinnamon
o Sliced fresh fruit

Preparation:

Combine preserves, vanilla yogurt and cinnamon. Mix it well and chill it for at least 1 hour. Your yogurt fruit dip is ready.


Pea Nut Noodles:

Ingredients:

o 8 ounces of spaghetti
o 1 bunch of green onions
o ¼ cup soy sauce
o ¼ cup hot water
o 1/3 cup peanut butter
o 2 tablespoon sesame oil
o 1 tablespoon cider vinegar
o 1 teaspoon white sugar
o 1 teaspoon minced fresh ginger root.
o 1 teaspoon crushed red pepper flakes

Preparation:

Cook pasta in boiling water. Drain the water and fry it with onion in oil in a pan. Add ginger and cook for 1 to 2 minutes. Mix it in peanut butter, soy sauce, water, vinegar, sugar, and red pepper flakes. Remove the heat. Your peanut noodle is ready.

Pickle Rolls:

Ingredients:

o 1 jar dill pickles
o 1 package softened cream cheese
o 1 pound sliced hams
o 10 tortillas

Preparation:

Spread cream cheese on one side of tortilla. Place a slice of ham over this. Spread another layer of cream cheese over the ham. Roll a pickle up in the tortilla and slice the roll into small pieces. You can refrigerate the rolls.
